๐ฅ Tofu Scramble โ Egg-Free Breakfast Recipe
A healthy, vegan-friendly breakfast that mimics scrambled eggs โ made from crumbled tofu and seasoned to perfection. Packed with protein, low in cholesterol, and ready in minutes!
๐ฝ Ingredients (Serves 1โ2):
- ยฝ block firm or extra-firm tofu (about 150g), drained and crumbled
- 1 tsp olive oil or water (for sautรฉing)
- ยผ tsp turmeric (for color & anti-inflammatory benefits)
- ยผ tsp nutritional yeast (optional โ adds an “eggy” flavor)
- ยผ tsp garlic powder or 1 clove minced garlic
- ยผ tsp onion powder or a small piece of diced onion
- Salt and pepper to taste
- Optional: chopped green onions, spinach, bell peppers, or mushrooms
๐ณ Instructions:
1. Crumble the Tofu
- Drain the tofu and crumble it into small pieces using your hands or a fork.
2. Sautรฉ the Aromatics
- In a non-stick skillet over medium heat, add oil or water.
- Sautรฉ garlic, onion, and any veggies you’re using for 2โ3 minutes until softened.
3. Add Tofu & Seasonings
- Add the crumbled tofu to the pan.
- Sprinkle in turmeric, nutritional yeast, garlic powder, salt, and pepper.
- Stir well and cook for 5โ7 minutes, stirring occasionally until lightly golden.
4. Serve Hot
- Serve warm on toast, in a wrap, or alongside roasted potatoes and avocado.

- For a smoky twist, add smoked paprika or liquid smoke.
- Store leftovers in the fridge for up to 3 days.
