How to Make Authentic Pasta Aglio e Olio in 15 Minutes

🍝 Pasta Aglio e Olio Recipe
A classic Italian pasta dish made with garlic, olive oil, chili flakes, and fresh herbs. It’s simple, quick, and incredibly delicious!

🍽 Ingredients (Serves 2–3):
8 oz (220g) dried spaghetti or linguine
1/3 cup extra virgin olive oil
4–6 cloves garlic, thinly sliced
1/2 teaspoon red chili flakes (adjust to taste)
Salt, to taste
Fresh parsley or basil – chopped (optional)
Grated Parmesan cheese (optional)
Black pepper
🍳 Instructions:

  1. Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente.
Reserve 1 cup of pasta cooking water before draining.
  2. Sauté the Garlic
In a large skillet, heat the olive oil over medium-low heat.
Add the sliced garlic and cook slowly until golden and crispy (about 3–5 minutes). Be careful not to burn it!
Add the chili flakes and stir for about 30 seconds to infuse the oil.
  3. Combine Everything
Add the drained pasta directly into the skillet with the garlic and chili oil.
Toss well to coat every strand in the flavorful oil.
If needed, add a few tablespoons of the reserved pasta water to loosen the sauce and help it cling to the pasta.
Season with salt and black pepper.
  4. Garnish & Serve
    Transfer to serving plates.
Sprinkle with freshly chopped parsley or basil.
Optional: top with grated Parmesan cheese.
    ✅ Tip:
For an extra-rich version, you can crack an egg into the pan off the heat and stir quickly for a creamy effect (similar to carbonara).

🕒 Total Time: 15–20 minutes
🔪 Difficulty: Easy
🍽 Storage: Store leftovers in the fridge for up to 2 days (reheat with a splash of water or oil).
