🍽 Ingredients (Serves 2–3):
- ½ cup red lentils (rinsed well)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tsp olive oil or water (for sautéing)
- 1½ cups vegetable broth (or water)
- ½ tsp ground cumin
- ¼ tsp turmeric (for color and anti-inflammatory benefits)
- Salt and pepper to taste
- Juice of ½ lemon (optional, for brightness)
- Fresh parsley or cilantro for garnish (optional)
🍳 Instructions:
1. Sauté the Aromatics
- In a medium pot, heat olive oil or water over medium heat.
- Add onions, garlic, carrots, and celery. Sauté for 3–4 minutes until softened.
2. Add Lentils & Liquids
