A quick, healthy, and delicious fried rice dish packed with scrambled egg and colorful veggies — perfect for using up leftovers or making a fast meal any time of day!
🍽 Ingredients (Serves 2–3):
2 cups cooked rice (preferably day-old rice)
2 eggs, beaten
1 cup mixed frozen vegetables (e.g., peas, carrots, corn) or fresh chopped veggies
2 tablespoons vegetable oil (or sesame oil for extra flavor)
2 cloves garlic, minced
2 tablespoons soy sauce (adjust to taste)
1 teaspoon oyster sauce (optional)
½ teaspoon sesame oil (for finishing) – optional
Green onions, chopped (for garnish)
Salt and pepper to taste
🍳 Instructions:
- Prepare the Egg
Heat 1 tablespoon of oil in a large skillet or wok over medium heat.
Pour in the beaten eggs and scramble until just cooked. Remove from pan and set aside. - Sauté the Veggies
Add another tablespoon of oil to the pan.
Add garlic and cook for 30 seconds until fragrant.
Add the mixed vegetables and stir-fry for 3–4 minutes until tender-crisp. - Add the Rice
Stir in the cooked rice and mix well with the veggies.
Break up any clumps with your spatula. - Combine Everything
Return the scrambled eggs to the pan.
Add soy sauce, oyster sauce (if using), salt, and pepper.
Stir well to combine everything evenly. - Finish & Serve
Drizzle with sesame oil (if using) and toss once more.
Garnish with chopped green onions.
